Baked Yams with Honey 😋   4 tbsp unsalted b

Baked Yams with Honey 😋  
4 tbsp unsalted butter
2 tsp chopped fresh sage
2 tsp chopped fresh thyme
2 lbs. yams or sweet potatoes, sliced 1 inch thick
1 tsp salt and black pepper, to taste
1 1/2 cups low-sodium chicken broth
Honey, for drizzling  

Set oven to 475°F.
Put the butter, sage, and thyme in a large microwave-safe bowl. Microwave in 30-second intervals until the butter is melted, about 1 minute. Add the sweet potatoes, salt, and pepper.
Place potatoes in a 9-by-13-inch metal baking dish in a single layer (a glass dish can crack on this temperature). Bake until potatoes are golden brown on the bottom, about 15 min. Flip and bake until a deep golden brown on the other side, another 15 min. Pour in the chicken broth and continue to bake until the potatoes are soft, and the liquid is almost completely reduced, about 15 minutes more. Transfer to a serving platter, drizzle with honey.

There is no other dish that brings the huge amount of nostalgia to me as Mangú con los Tres Golpes. It defines my childhood and my growing into the woman I am today. I also think it’s the main meal that has attached me to my family origins, my culture. Even though I was born in America and feel very American, I feel just as much Dominican. 🇩🇴

This national dish is one you must have when you visit the Dominican Republic or if you happen to know one of us here in the states. And, btw, you can even have this dish at Dominican resorts. Don’t see it on one of their menus? Ask and they will deliver, I have been told.

This Bacon Corn Cheese is a MUST make! It was on #dinersdriveinsanddives (@foodnetwork) and although they didn’t share measurements, I set out to give it a try and it was a hit! I hope you try it!  2 tbsp butter
3 strips chopped bacon or to taste
2 chopped jalapeños or to taste
1 can sweet corn, drained
1 can white corn, drained
1 tbsp garlic
¼ cup scallions, divided (save some for garnish)
Salt and pepper to taste
1/4 cup mayonnaise
3 tbsp condensed milk (it’s sweet)
1 cup mozzarella divided (save a little for topping before broiling)

I loved this quick pastry dough pizza recipe! I saw it on @allrecipes IG, made by @annibell14. Mine didn’t turn out as fluffy but I think it’s because I overheated the dough. Next time I will let it defrost on its own. Even with that, it was absolutely delicious! 🍕

I love pulled pork and I love to make it seasoned

I love pulled pork and I love to make it seasoned in a lot of different ways. One of my favorites as of late is using @SpanglishAsadero_official’s seasonings. This time I used All Purpose and Al Pastor. I cannot even come close to telling you how good it was!
I made tacos, had it with rice and beans as well. Hard to have leftovers because it goes so fast!

2 tbsp corn oil/vegetable oil
7 lb pork shoulder butt
About 5 tbsp Spanglish Asadero All Purpose
1 ½ or so Spanglish Asadero Al Pastor
1 cup chicken broth

Cut the pork butt/shoulder into large chunks.
Season the pork with the Spanglish Asadero Seasonings.
Coat well.
Add corn oil to Instant pot on Sauté mode.
Once oil is hot, add a layer of the pork chunks and brown for about 30 seconds on each side. Set aside, continue in batches.
Once all the pieces are sauteed, add the pork back in. You can overlap them.
Add the chicken broth.
Set instant pot on meat for 90 minutes. This will take a few minutes to get to temperature.
Make sure the valve is closed.
Once the cooking is done, allow a natural pressure release. Once the countdown is done, push the valve open and carefully open the instant pot.
Place the pork on a large baking dish and shred. Add some of the liquid left in the instant pot over the shredded pork.
Place the pork in the oven at 400° degrees. Cook for about 5 minutes or until lightly golden.
Remove from oven and enjoy with your desired sides or incorporated into tacos, burritos, empanadas and more.
