The Juiciest Baked Chicken you will ever have!

INGREDIENTS
6 tablespoons olive oil
1/4 cup orange juice
5 tbs lemon juice
3 tsp Italian seasoning
3 tsp salt
3 tsp black pepper
3 tsp minced garlic
1 tbsp adobo
1 tsp oregano
4 lbs chicken, I mixed legs, thighs (and breasts that I cooked separately for my one son)
Bijol for garnishing before baking (you can sub with saffron or paprika)

INSTRUCTIONS
Mix all ingredients in a bowl, except the chicken. Place chicken in a bowl and add the marinade you just made. Mix well.
Cover the bowl and refrigerate for about 1 hour.
Preheat oven to 400°F. Place the chicken skin side up, on a cast iron skillet.
Spoon leftover marinade on top of each piece of chicken.
Sprinkle with Bijol/paprika/saffron.
Bake for about 40 minutes or until chicken meat is cooked through and has a golden color.
If cooked through but you’d like more golden color, broil on low for about 3 minutes.

Instant Pot Beef Teriyaki, cooks in 25 minutes! 

2 lb flank steak
2 cups teriyaki sauce (I used Veri Veri Teriyaki)
¼ cup water
1/2 green onion sliced
1 tbsp grated fresh ginger
1 tsp black pepper

To thicken after cooking
2 tbsp water
1 tbsp cornstarch

Garnish
¼ cup sesame seeds
¼ cup green onions sliced  

Slice the flank steak against the grain into thin strips.
Add the flank steak strips, green onion, teriyaki sauce, water, ginger and black pepper to instant pot. Stir well.
Secure lid and close the pressure-release valve.
Set to manual/high pressure, for 5 minutes. After cooking, let it sit for 10 minutes before releasing any remaining pressure.
Set to sauté and add the water and cornstarch mixture. Stir into pot.
Cook until thickened, 2-3 minutes.
Top with sesame seeds and green onions. Serve over rice or noodles.

There Pumpkin Empanadas are the BEST!   10 empanada discs, cut in half (yields 20)
1 cup pumpkin puree
8 oz fontina cheese fontina, shaved
corn oil for frying
honey to drizzle over top  
In a bowl, mix the pumpkin puree and the fontina cheese.
Cut empanada discs in half.
Place 1 tsp of the pumpkin puree mixture in the middle of the empanada half.
Fold over and with a fork, press down all around the edges until sealed.
Fry over medium low heat until golden brown.
When plated, drizzle with desired amount of honey.  Full video and recipe 👇

This Spicy Chorizo Monkey Bread recipe came about as an inspiration after I saw an IG reel by @grillin_with_dad. Prepared differently than my inspiration, it looked delicious, and I immediately thought this would be a great twist for me. I chose a Mexican twist with the chorizo, taco cheese and Monterey Jack cheese. I honestly feel like it was perfect! I will be making this frequently as it was so easy to make. And I really suggest you try both of our versions.

Quick Lemon Pasta @inagarten inspired me to make this recipe with my own little twist to her Fan-Favorite Lemon Capellini. I used what I had on hand, added a couple of things and it was delicious!
 My Twist… Ingredients: Salt and freshly ground black pepper  1 lb. thin spaghetti  1/2 pound (2 sticks) salted butter  Zest and juice of 2 large lemons  1 tbsp chopped basil, I used Gourmet Garden (Semi-dried and lasts 4 weeks) Grated parmesan to taste  Directions: Add 2 tablespoons of salt to a large pot of boiling water.  Add the thin spaghetti and cook to package instructions.  Meanwhile, heat a large sauté pan, add the butter, and heat until the butter is melted.  Add the zest and juice of the 2 lemons. Add 1 teaspoon pepper and swirl the pan to combine.  As soon as the pasta is cooked, lift the pasta out of the water, allowing most but not all of the water to drain back into the pot, and add all the pasta to the sauce.  Cook for one minute, adding pasta water to the sauce with a ladle just enough to keep the pasta moist. Add chopped basil and parmesan. Mix well. 4 chicken breasts sliced in half (quicker cooking)
½ cup orange juice
⅓ lime juice
2 tbsp minced garlic
¼ cup cilantro
½ tbsp cumin
1 tsp dried oregano
1 tsp salt
½ tsp black ground pepper
½ cup olive oil 1 ½ tbsp adobo
½ yellow onion, thinly sliced - - - - - -  Preheat oven at 350°F Place the prepared chicken to a baking dish. (I did all breasts but feel free to use any other parts you prefer) To a blender, add orange juice, lime juice, garlic, cilantro, cumin, oregano, salt, black pepper. Blend for 10 seconds. Add the olive oil and blend for 5 seconds. Pour mojo sauce over the chicken and then sprinkle the adobo over top. Spread the sliced onions over top as well. Bake for 35 to 45 minutes or until chicken is cooked through. We had it with rice and poured the delicious liquid all over it.
