Classic Panamanian Stewed Chicken (Pollo Guisado)

Creamy Corn Campanelle 1 1/2 cups vegetable stock

Creamy Corn Campanelle
1 1/2 cups vegetable stock
2 pinches saffron threads or 2 tsp Bijol
Salt and pepper
1 lb Campanelle pasta
3 ears corn, kernels shaved off
2 tbsp olive oil
2 tbsp butter
crushed red pepper, to taste
2 shallots, finely chopped
1 ½ tbsp minced garlic
½ tsp dried thyme
1 tbsp flour
Zest of one lemon
1/2 cup white wine
1/3 cup heavy cream
A generous handful grated Parmigiano-Reggiano,  plus more for topping.
Chopped basil, for topping
