Dominican Eggplant Fritters (Berengenas Fritas)

Ingredients: 1 large eggplant, water, Mazola oil, 2 cups flour, 2 eggs, 1/4 finely chopped onion, 1 tbs adobo, salt.

Cut off the ends and peel the eggplant, then slice it into 1 1/2 inch rounds.

Medium Brush Stroke

Rinse and drain the eggplant rounds, set them aside.

Boil the eggplant rounds for a couple of minutes. In a large bowl, mix flour, water, eggs, adobo, and onions to make a slightly loose pancake batter.

Dip the boiled eggplant rounds in the batter and fry them in batches until golden brown.
