Smoked Turkey Bruschetta

A simple and delicious bruschetta recipe made with leftover turkey from our thanksgiving dinner. Even if it's not Thanksgiving or a holiday. you must give it a try!

Ingredients

  • 1 Italian or french baguette pre sliced
  • olive oil to drizzle over bread slices
  • 2 cups leftover turkey chopped
  • 1 mozzarella ball chopped
  • 1 cup cherry tomatoes thinly sliced
  • 4 tbs olive oil for tomato, mozzarella mixture
  • 6 large basil leaves sliced
  • pepper to taste
  • salt to taste
  • 6 tbs balsamic vinaigrette
  • 2 tsp garlic minced
  • shaved mozzarella to taste

Instructions

  • Preheat oven to 350º degrees.
  • Slice your baguette and lay the slices on a cookie sheet lined baking pan.
  • Drizzle olive oil over the slices.
  • Bake until the bread slices are a bit golden, about 10 to 15 minutes.
  • While bread slices bake, make the tomato mozzarella mixture.
  • Chop the mozarella.
  • Slice the tomatoes.
  • Thinly slice the basil leaves.
  • Place the tomatoes in a large bowl. Add the 4 tbs of olive oil and garlic. Stir well.
  • Add the mozarella, balsamic vinaigrette, pepper, salt, basil and stir well.
  • Chop the leftover turkey.
  • Once the bread is ready, place turkey on the slices. The amount is up to you and how thick you want them or how much turkey you have left.
  • Top the turkey with the tomato mozzarella mixture.
  • Sprinkle the parmesan over top and you are ready to serve.
