Fried Heirloom Tomato Panini

Quick and simply delicious fried tomato sandwich. Made with fried heirloom tomatoes, using cornmeal, adobo, sazón, jalapeño pepper jack cheese and red tomatoes on sourdough bread pressed in a panini press. Sheer perfection!

Ingredients

  • 1 large heirloom tomato green tomato works too
  • 1 large red tomato
  • 2 eggs whisked to use as egg wash
  • 1 - 1/2 cups cornmeal
  • 1/2 tsp adobo
  • 1/3 tsp sazón
  • corn oil for frying about 1/2 inch depth
  • 8 slices jalapeño pepper jack cheese
  • Butter spray Example: Pam or butter

Instructions

  • Slice the tomatoes and set aside.
  • Place cornmeal in a shallow plate.
  • Add adobo and cornmeal. Mix in well.
  • Place eggs in a shallow plate and whisk well.
  • Dredge heirloom/green tomatoes in the egg wash and then the cornmeal mixture. Set aside on a plate.
  • Fry the cornmeal dredge tomatoes in corn oil that's been heated over medium high heat. Give it a couple of minutes on each side.
  • Once done, place tomatoes on a paper towel lined plate.

Assemble the sandwich

  • Preheat the panini maker.
  • For each sandwich, place two slices side by side.
  • Place 2 slices of the jalapeño pepper jack cheese on each slice.
  • Place two fried tomatoes on one side and two slices of red tomato slices on the other side.
  • Bring the two sides together.
  • Spray the panini maker with butter spray.
  • Place the sandwich in the panini press.
  • Press until golden brown. (times vary depending on device)
  • Once done, split in two and enjoy with chips or plantain chips.
