Classic Italian Bruschetta

Who doesn't love an authentic bruschetta! I am not messing with perfection so here it is just as it was intended to be!

Ingredients

  • 5 tomatoes ripe,medium sized, chopped
  • 1 tsp minced garlic
  • 6 basil leaves sliced thin
  • 2 tsp balsamic vinegar
  • Salt and pepper to taste
  • 1 loaf Italian or french bread cut into 1 inch slices
  • 1/4 cup butter (olive oil to make it vegan)
  • Garlic powder​ to taste

Instructions

  • Preheat oven to 375.
  • Spread both sides of the slices of bread with butter and lay them on a baking sheet. (use olive oil instead to make it vegan)
  • Bake for 10 minutes or until golden. Flip over.
  • Sprinkle a small amount of garlic powder over the bread and place back in the oven for another 5 minutes or until this side is also golden.
  • While bread is baking, prepare the tomatoes.
  • Quarter the tomatoes and take out all the seeds, give a good rinse.
  • Chop the tomatoes into small pieces.
  • In a bowl mix the tomatoes, minced garlic, basil, balsamic vinegar, salt and pepper.
  • I like to serve the bread in one dish and the tomatoes in another so that the tomatoes don't turn the bread soggy if sitting on there too long.
  • If serving these at a gathering be sure to keep tomato mixture chilled.
