Mustard Roasted Cauliflower Head

Roasted Mustard Cauliflower

Nice and roasted with some grated parmesan on top. Try a piece and the rest will be history!

Ingredients

  • 1 Large head cauliflower cut leaves off bottom
  • Olive oil to taste to cover cauliflower head
  • Sea salt to taste
  • 1/4 cup butter
  • 3 tbs Dijon mustard
  • Fresh parsley finely chopped

Instructions

  • Heat oven to 400 degrees.
  • Place cleaned cauliflower head in a shallow oven-safe, non-stick skillet.
  • Cover with olive oil and make sure the oil falls on the skillet and that the cauliflower is covered 100% with the oil as well.
  • Season with salt to taste.
  • Cover the pan with aluminum foil, try not to have any open gaps.
  • Place in oven for about 40 minutes. If it's a large one, add another 10 minutes.
  • During the last 10 minutes melt the butter, add the mustard and whisk well. Then add the parsley.
  • When 40 minutes are up, drizzle or brush the mustard butter over the cauliflower heard and place back in the oven, uncovered for another 10 minutes or until desired roast is achieved.

Notes

Would you like to add some heat, sprinkle some red pepper flakes at the end to give it a kick.
