Let's Party! Beef and Fish Tostadas, Tacos and Lettuce Cups

This is a perfect medley for entertaining!

Ingredients

For the beef

  • 2 lbs 85% ground beef
  • 3 tbs lime juice
  • 2 tbs soy sauce
  • 1 tbs Goya Adobo
  • 1/2 tsp ground Dominican oregano
  • 1/2 tsp dried cilantro
  • 2 tbs Goya Salad Olives and a bit of the juice with the juices
  • 8 oz Goya Tomato Sauce can

For the fish

  • 1 lb tilapia fillets rinsed and pat dried
  • 1 tbsp olive oil
  • 1 1 small onion chopped
  • 4 garlic cloves finely minced
  • 2 jalapeño peppers chopped (seeds removed for less heat)
  • 2 cups diced tomatoes you can use fresh tomatoes as well
  • 1/4 cup fresh cilantro chopped
  • 3 tbsp lime juice
  • salt and pepper to taste

Extra ingredients

  • Tostadas, tortillas and butter (Boston) lettuce
  • Shredded taco cheese for topping
  • Fresh Salsa or pico de gallo for topping
  • Avocado or guacamole for topping
  • Lime wedges for topping
  • Fresh Cilantro, chopped for topping
  • And whatever your taste buds desires!

Instructions

For the beef

  • In a heavy bottom pan, brown beef. You won't need oil as it will release it's own.
  • When it's browned about half way, add lime juice, soy sauce, adobo, oregano, cilantro, salad olives and tomato sauce.
  • Continue to cook stirring frequently until totally cooked. You'll know because the liquid will become a bit greasy.

For the fish

  • Heat olive oil in a skillet.
  • Sauté onion until translucent, then add garlic. Cook for 30 seconds or so.
  • Place tilapia on the skillet and cook until the flesh starts to flake.
  • Add jalapeño peppers, tomatoes, cilantro and lime juice.
  • Sauté over medium-high heat for about 5 minutes, breaking up the fish with the spoon to get everything mixed well
  • Season to taste with salt and pepper.
