Pork and Chive Dumplings with Sesame Soy Dipping Sauce

Ingredients
Ingredients for the dumplings
1/2lbground pork
2tspfresh gingerpeeled and minced
1/2cupgreen cabbageminced
1garlic cloveminced
1/2cupthinly sliced fresh chives
2tbssoy sauce
1egg white
1tspsea salt
1pkg3" round "Shanghai or Hong King Style" dumpling wrappers
Sesame-Soy dipping sauce
2tbssoy sauce
ttbsrice vinegar
1tbsfresh gingerpeeled and minced
1tspsugar
1/2tsptoasted sesame oil
1tbsthinly sliced fresh chives
Cabbage leaves for lining, or oiled sheets of parchment paper
Instructions
To make the pork filling
In a mixing bowl, add pork, ginger, cabbage, garlic, chives, soy sauce, egg white, and salt.
Combine well.
Making the dumplings
Lay 1 wrapper at a time until you feel comfortable doing more at a time.
Place a teaspoon full of the pork mixture at the center of the dumpling wrapper.
Using a pastry brush or a fingertip, brush cold water around the edge of the dumpling. Fold wrapper in half and then pinch the edges as shown in the Youtube video.
Place assembled dumplings with pleated side up, on a rimmed baking sheet lined with parchment paper or non-stick Reynolds wrap. Cover with clean, damp paper towel to prevent drying. repeat until done.
How to cook the dumplings
Heat water in a skillet or steam pot.
Arrange dumplings in steamer at least 1/2 inch apart, cover and steam for about 6 to 8 minutes.
While dumplings are steaming, combine all dipping sauce ingredients in a small bowl and set aside.
When dumplings are done, serve onto a large warmed platter and serve immediately with the dipping sauce on the side.

This is the best layout to first freeze the dumplings for later. Once frozen, place them in a freezer bag. They will stay fresh for approximately 1 month.
