White Corn Guacamole

Ingredients

  • 4 ripe Haas avocados
  • juice of 1 lemon
  • 8 dashes hot pepper sauce (If desired)
  • 1/2 cup small-diced red onion
  • 1 small can corn  I prefer Green Giant White Shoepeg Corn
  • 1 cup black beans rinsed
  • 1 garlic clove minced
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 tomato seeded, and small-diced

Instructions

  • Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl, (I use my hands).
  • Chop up as desired. 
  • IMMEDIATELY add the lemon juice, hot sauce - if wanted, onion, corn, beans, garlic and toss well.
  • Add the tomatoes. Mix well and taste for salt and pepper.
  • Serve with corn chips.
