Harlequin Tilapia

Easy and delicious baked fish recipe.

Ingredients

  • 4 tilapia fillets or other white fish
  • 2 eggs
  • 1 cup lemon pepper marinade store bought
  • 1 cup seasoned breadcrumbs
  • 2 cups chopped onions and peppers mix colors
  • 1 cup olive oil

Instructions

  • Preheat oven to 375º degrees.
  • In a deep plate whisk the eggs to create an egg wash.
  • Add lemon pepper marinade to the egg wash.
  • Dip the fish in the egg wash marinade, then lightly dredge in seasoned breadcrumbs.
  • Pour 1/2 the olive oil into a baking dish.
  • Add half the onions and peppers into the baking dish and spread as evenly as possible.
  • Add the rest of the olive oil into the remaining chopped onions and peppers.
  • Place the breaded fish in a single layer in the baking dish.
  • Sprinkle the rest of the oiled onions and peppers over the fish.
  • Bake for 25 minutes or until fish is cooked through.
  • Serve with salad, rice, potatoes. The options are endless!
