Preheat oven to 375.
Spread both sides of the slices of bread with butter and lay them on a baking sheet. (use olive oil instead to make it vegan)
Bake for 10 minutes or until golden. Flip over.
Sprinkle a small amount of garlic powder over the bread and place back in the oven for another 5 minutes or until this side is also golden.
While bread is baking, prepare the tomatoes.
Quarter the tomatoes and take out all the seeds, give a good rinse.
Chop the tomatoes into small pieces.
In a bowl mix the tomatoes, minced garlic, basil, balsamic vinegar, salt and pepper.
I like to serve the bread in one dish and the tomatoes in another so that the tomatoes don't turn the bread soggy if sitting on there too long.
If serving these at a gathering be sure to keep tomato mixture chilled.
