Low Calorie Baked Chicken Parmesan

Ingredients

  • 4 chicken breasts halved
  • breadcrumbs use as little as possible
  • 4 tsp grated parmesan cheese separated
  • 8 tbs low fat mozzarella
  • 10 tbs marinara sauce separated
  • 1 tbs extra virgin olive oil

Instructions

  • Preheat oven to 450º degrees.
  • Halve chicken breasts to make them thinner. This will also aid in quicker cooking process.
  • Bread the chicken with the breadcrumbs very lightly. Shake it off to remove any excess.
  • In a baking dish or oven proof skillet, pour 1 tbs olive oil.
  • Then spread 2 tbs marinara sauce at the bottom of the baking dish or skillet.
  • Place breaded chicken breasts over the sauce and olive oil.
  • Spread 1 tbs marinara sauce over each breast.
  • Sprinkle half a tsp grated parmesan over each breast.
  • Top with a small sprinkle of low fat mozzarella cheese, no more than a tbs.
  • Bake for 25 minutes or until entirely cooked through.
  • This recipe yields 8 servings, approximately 558 calories each plate.
