TRADITIONAL DOMINICAN GREEN AND YELLOW FRIED PLANTAINS WITH MOJO SAUCE

Green and yellow fried plantains are typical of the Dominican Republic and other Caribbean islands.

All this recipe requires are green and yellow plantains, and corn oil for frying.

Mojo sauce  is simple. Corn oil, finely chopped cilantro, and grated or minced garlic.

Heat oil in two separate skillets while peeling the plantains.

Cut the green plantain into 1-inch circles and the yellow plantain into thinner diagonal slices.

Fry the green plantain for about a minute on each side and set aside. Then start the yellow plantains.

Flatten the green plantain circles using a plate, pan, cup or a tostonera. Fry them for 2-3 minutes until crunchy.

Drain the fried green plantains on paper towels and serve with the Mojo sauce. Enjoy!
