Traditional Dominican Green and Yellow Fried Plantains with Mojo Sauce
Green and yellow fried plantains are one of my favorite Dominican foods to eat. So EASY and delicious! In the Caribbean you’ll find them in many islands like Puerto Rico and Cuba. Make these with the Mojo sauce on the side and it makes for a great entertaining appetizer!
Ingredients:
1 green plantain
1 yellow plantain
corn oil for frying – cover the bottom of the pan
Mojo Ingredients:
1/4 cup corn oil
1/2 tsp finely chopped Cilantro
1/4 tsp finely grated or minced garlic
Traditional Dominican Green and Yellow Fried Plantains with Mojo Sauce
Directions:
Heat the oil on medium heat. Two Separate skillets.
While the oil is heating up, peel the plantains.
Cut green plantains into about 1 inch circles.
Cut yellow plantains in thinner diagonal slices.
Fry green plantain for about one minute each side and set aside.
At the same time, fry yellow plantain until each side is nice and golden. Set aside until serving.
Take the green plantain circles and flatten them. (You can smash them with the bottom of a plate, pan or cup)
Put the flattened plantains back in the oil and fry for another 2 to 3 minutes until nice and crunchy.
Remove the plantains and drain on paper towels.
For the Mojo Sauce:
In a small bowl, mix oil, cilantro and garlic. Serve with plantains.
