Ingredients

2 slices frozen garlic Texas toast bake as instructed for crispy crust
1 to 2 tbsp 1 to 2 tablespoons prepared pesto definitely to taste
1 1 small tomato sliced
4 oz Burrata cheese as close to that amount
Freshly ground black pepper optional
Salt optional

Instructions

Preheat the oven to 450°F.
Place the frozen garlic Texas toast in a baking dish or on a baking sheet.
Bake for 4 minutes.
While Texas toast cooks, slice tomatoes and get cheese ready.
Flip the Texas toast and bake for another 4 minutes, until golden and crispy.
Spread the prepared pesto over one slice of toast.
Add the burrata cheese next, you can spread or add big chunks like I prefer it.
Layer the sliced tomatoes over the burrata.
Season with a little black pepper or salt if desired.
Top with the second piece of garlic Texas toast.
Cut in half and serve immediately.

Notes

For the best texture, assemble the sandwich right before eating so the garlic Texas toast stays crispy.

You can easily add leftover chicken, steak, prosciutto or other ingredients you already have in the refrigerator.
