Sausage and Peppers

A one casserole meal that's quick and easy to make!

Ingredients

  • 3 tbs olive oil
  • 1 large onion sliced into wedges
  • 1 pepper sliced into wedges
  • any other color pepper you'd like sliced into wedges
  • any other veggies you'd like, for example carrots sliced into small chunks
  • 3 garlic cloves minced
  • 2 tbs fresh thyme chopped (or 1 tsp dried)
  • 1 lb baby new potatoes unpeeled and halved or quartered
  • 2 ears of corn cut in four pieces
  • 5-10 sweet or mild Italian sausages
  • Salt and freshly ground black pepper to taste

Instructions

  • Place all the ingredients in a large, re-sealable freezer bag.
  • Seal the bag shut and shake, mix well to coat everything in the oil.
  • Allow it to marinade for at least 4 hours, overnight preferred.
  • Place into a large roasting pan, spreading the ingredients out into one even layer and ensuring that the sausages aren’t covered by any of the vegetables, they would lay on top.
  • Bake at 400 degrees for 30 minutes then remove sausages to a plate.
  • Toss vegetables and return sausages to pan turned over to other side.
  • Cook for another 25 minutes or until browned.
