This is a British inspired recipe that I love because it is so quick and simple to make. You can add any veggies you’d like and make a complete dinner out of it. I highly recommend you play with it!
Ingredients:
3 tbsp olive oil
1 large onions, sliced into wedges
1 red pepper, deseeded and sliced, Any other color pepper you’d like
Any other veggies you’d like, for example carrots…
3 garlic cloves, minced
2 tbsp chopped fresh thyme (or 1 tsp dried)
1lb. baby new potatoes, unpeeled and halved or quartered
2 ears of corn cut in four pieces
5-10 sweet or mild Italian sausages
Salt and freshly ground black pepper to taste
Directions:
Place all the ingredients in a large, re-sealable freezer bag.
Seal the bag shut and shake, mix well to coat everything in the oil. Allow it to marinade for at least 4 hours, overnight preferred. I do a minimum of 24 hours.
Place into a large roasting pan, spreading the ingredients out into one even layer and ensuring that the sausages aren’t covered by any of the vegetables, they should lay on top.
Bake at 400 degrees for 30 minutes then remove sausages to a plate.
Toss vegetables and return sausages to pan turned over to other side.
Cook for another 25 minutes or until browned.
