Ingredients

  • 1 bag plantain chips or strips

Onion relish

  • 1 medium onion, sliced red or yellow
  • 2 tbsp corn oil
  • 1 tbsp white vinegar

For the Salami/Salchichon

  • 10 1/2 inch salami round slices, each round cut in strips
  • 1 tbsp corn oil

For the fried eggs

  • 2 to 4 large eggs
  • 1/4 cup corn oil

Other ingredients for topping

  • 5 oz Queso Tropical crumbled
  • chopped cilantro to taste

Instructions

  • In a medium size microwavable bowl, place the sliced onions, oil and vinegar. Stir and microwave for about 4 minutes. If you'd like more tender onions, give it 30 seconds to 1 more minute.
  • Prep salami.
  • In a skillet, add a tsp oil over medium heat. Fry the salami strips and set aside.
  • In the same skillet, add the rest of the oil and increase heat to high. When the oil is hot, use a lid begin to fry the eggs until they are cooked to your liking. I like a runny yolks so in a minute or so, my eggs are done.
  • I also use a spoon to splash the eggs over the top with some of the oil. Cooks the top faster.
  • Once eggs are done, set eggs aside and assemble the platter quickly.
  • Chips at the bottom, topped with salami, crumbled cheese, onion relish and it's oil, the fried eggs and chopped cilantro.
