chicken breasts

breadcrumbs

marinara sauce

extra virgin olive oil
Instructions
Preheat oven to 450º degrees.
Halve chicken breasts to make them thinner. This will also aid in quicker cooking process.
Bread the chicken with the breadcrumbs very lightly. Shake it off to remove any excess.
In a baking dish or oven proof skillet, pour 1 tbs olive oil.
Then spread 2 tbs marinara sauce at the bottom of the baking dish or skillet.
Place breaded chicken breasts over the sauce and olive oil.
Spread 1 tbs marinara sauce over each breast.
Sprinkle half a tsp grated parmesan over each breast.
Top with a small sprinkle of low fat mozzarella cheese, no more than a tbs.
Bake for 25 minutes or until entirely cooked through.
This recipe yields 8 servings, approximately 558 calories each plate.
