Low Calorie Baked Chicken Parmesan

This is a delicious Low Calorie Baked Chicken Parmesan recipe submitted to me by follower Bryan Lauer and will be the first in a series I will be posting regularly.

I met Bryan while I visited the beautiful state of Utah for a food conference this past May and he was my Lyft driver! Yes! We bonded on a 40 minute or so ride to the airport on my way back home.

Bryan loves to cook and we talked food the entire ride. We swapped recipe ideas and I even tried to convince him to blog! Bryan is extremely knowledgeable and has what a blogger must have and that is love for food and cooking. When you can talk excitedly about it, the world needs to eat your food! So hint, hint! Do it Bryan!

So here it is! A beautiful Low Calorie Baked Chicken Parmesan!

Ingredients:

4 chicken breasts, halved
10 tbs marinara sauce
Seasoned bread crumbs
4 tsp grated parmesan
1 tbs Extra Virgin olive oil
8 tbs low fat mozzarella cheese

Directions:

Preheat oven to 450º degrees.

Halve chicken breasts to make them thinner. This will also aid in quicker cooking process.

Bread the chicken with the breadcrumbs very lightly. Shake it off to remove any excess.

In a baking dish or oven proof skillet, pour 1 tbs olive oil.

Then spread 2 tbs marinara sauce at the bottom of the baking dish or skillet.

Place breaded chicken breasts over the sauce and olive oil.

Spread 1 tbs marinara sauce over each breast.

Sprinkle half a tsp grated parmesan over each breast.

Top with a small sprinkle of low fat mozzarella cheese, no more than a tbs.

Bake for 25 minutes or until entirely cooked through.

This should yield 8 servings, 558 calories each plate.
