- 2 tbsp butter
- 3 strips bacon, chopped
- 2 chopped jalapeños
- 1 can sweet corn drained I used white & yellow corn
- 1 tbsp garlic
- 1/4 cup scallions, chopped
- salt and pepper to taste
- 1/4 cup mayonnaise
- 3 tbsp condensed milk
- 1 cup mozzarella, divided
In a large skillet, over medium-hight heat, melt the butter.
Then add the chopped bacon and cook until it's a bit browned.
Once bacon is cooked, remove excess fat, add the jalapeños, corn, and most of the chopped scallions. (The rest will be used for serving). Give the mixture a good stir.
Add salt, pepper, and cook for another couple of minutes.
Place mayo in a small cup and add condensed milk. Stir well. Add it to the corn mixture, stir well and cook for a couple of minutes.
Add mozzarella cheese. Stir in well.
Transfer your corn mixture to a small cast iron skillet and broil on low for about two minutes, making sure not to burn the surface.
Once done, remove from the oven and top with the remaining chopped scallions.
Serve with tortilla chips or some crusty bread and enjoy!
