This Bacon Corn Cheese Dip made its way onto Diners, Drive-Ins and Dives, and the second I saw it, I knew I had to try it. But here’s the catch, they didn’t share the measurements! So, what did I do? I went full detective mode. I dissected that video, watched it a million times (okay, maybe not a million, but close!), and analyzed every ingredient they threw in. After a lot of pausing, rewinding, and squinting at the screen, I put together my own version, and let me tell you, it’s a game-changer!

Now, I’m sharing it with you because I think it’s as close to perfection as it gets. But hey, if theirs is better, we all need to plan a trip and taste it straight from the source!

Either way, this dip is a must-try. Grab your chips and get ready to dig in!

Ingredients

  • 2 tbsp butter
  • 3 strips bacon, chopped
  • 2 chopped jalapeños
  • 1 can sweet corn drained I used white & yellow corn
  • 1 tbsp garlic
  • 1/4 cup scallions, chopped
  • salt and pepper to taste
  • 1/4 cup mayonnaise
  • 3 tbsp condensed milk
  • 1 cup mozzarella, divided

Instructions

  • In a large skillet, over medium-hight heat, melt the butter.
  • Then add the chopped bacon and cook until it's a bit browned.
  • Once bacon is cooked, remove excess fat, add the jalapeños, corn, and most of the chopped scallions. (The rest will be used for serving). Give the mixture a good stir.
  • Add salt, pepper, and cook for another couple of minutes.
  • Place mayo in a small cup and add condensed milk. Stir well. Add it to the corn mixture, stir well and cook for a couple of minutes.
  • Add mozzarella cheese. Stir in well.
  • Transfer your corn mixture to a small cast iron skillet and broil on low for about two minutes, making sure not to burn the surface.
  • Once done, remove from the oven and top with the remaining chopped scallions.
  • Serve with tortilla chips or some crusty bread and enjoy!
