Mexican Street Corn Lollipops

1 Wooden skewer for each corn wheel
Ingredients
3
corn on the cob
husk peeled, corn on the cob cleaned and cut into 4 round pieces. Renders 12 pieces.
vegetable oil for frying
Spanglish Asadero Elote seasoning
or your Mexican seasoning of choice
chopped cilantro
for garnish
crumbled Cotija cheese
for garnish
Instructions
Prep corn by removing the corn husk, clean, and cut into 4 round pieces.
In a bowl, place the corn round and add plenty of seasoning. About 3 to 4 tbsp.
Add 2 tbsp of vegetable oil and stir well.
Insert a wooden skewer into each corn wheel.
Let sit for about 15 minutes at room temperature.
Once ready, fry on high heat. Add enough oil to cover at least 3/4 of the first corn wheel.
Fry for 4 to 5 minutes.
Once done, place on a paper towel lined plate for about 1 minute. if you'd like to shorten the skewer, this is your opportunity.
Next transfer to a serving plate.
Garnish with chopped cilantro and crumbled Cotija cheese. Sprinkle more seasoning if desired.
