Equipment
- 1 Wooden skewer for each corn wheel
Ingredients
- 3 corn on the cob husk peeled, corn on the cob cleaned and cut into 4 round pieces. Renders 12 pieces.
- vegetable oil for frying
- Spanglish Asadero Elote seasoning or your Mexican seasoning of choice
- chopped cilantro for garnish
- crumbled Cotija cheese for garnish
Instructions
- Prep corn by removing the corn husk, clean, and cut into 4 round pieces.
- In a bowl, place the corn round and add plenty of seasoning. About 3 to 4 tbsp.
- Add 2 tbsp of vegetable oil and stir well.
- Insert a wooden skewer into each corn wheel.
- Let sit for about 15 minutes at room temperature.
- Once ready, fry on high heat. Add enough oil to cover at least 3/4 of the first corn wheel.
- Fry for 4 to 5 minutes.
- Once done, place on a paper towel lined plate for about 1 minute. if you'd like to shorten the skewer, this is your opportunity.
- Next transfer to a serving plate.
- Garnish with chopped cilantro and crumbled Cotija cheese. Sprinkle more seasoning if desired.
