White Bean Salad
This white bean salad is one of my husbands’ favorites, especially when he is trying to eat light. If I make it for dinner I will add some shredded chicken to add extra protein and guarantee he is feeling full. Otherwise, it makes for a great side any time of year.
Ingredients:
1 15 oz can Goya small white beans rinsed and drained
1/2 cup shredded carrots chopped
1 cups cherry tomatoes chopped
1/2 cucumber de-seeded and chopped
1/4 cup fresh flat leaf parsley, chopped
Juice of 1 small lemon
1/4 cup white vinegar
1/2 tablespoon cumin
2 tablespoons olive oil
salt to taste
Instructions:
Add all ingredients into a mixing bowl and stir.
Voila! Simple as can be!

- 1 tbs olive oil
- salt to taste
Instructions
- Add all ingredients into a mixing bowl and stir.
