Easy Chickpea Salad
Ingredients
- 1 15oz can chickpeas rinsed and drained
- 1/2 cup grape tomatoes sliced in half or 4's
- 1 large English seedless cucumber sliced and chopped to taste
- 1 red or yellow onion chopped
- 2 tbsp parsley chopped
For the dressing
- 1/4 cup good olive oil
- 2 tbsp lemon juice
- 1 tsp garlic minced
- 1 tsp Spanglish Asadero Surf & Turf
- Salt & pepper to taste
- 1 medium avocado in slices
Instructions
Preparing the dressing
- Add all ingredients into a small bowl and combine well. Set aside.
Salad
- Add all ingredients into a bowl.
- Once all the ingredients are in the bowl, add the prepared dressing and mix well. You can refrigerate or have at this time.
- Top with sliced avocados if desired.
