Quick and Easy Fish Tacos

I make dinner pretty much every night and sometimes I am just bored to death with chicken, beef and pork. These are my autistic sons’ favorite things to eat. On lazy days, I cook what I know he will eat. But last night, I really wanted fish again and how much easier could it get than these fish tacos?!  I used @spanglishasadero_official Surf & Turf for that extra flavor. They were to die for!  Oh! And the leftovers were gone after lunch! Yum!  4 tilapia filets, rinsed and patted dry
2 tsp olive oil
½ cup yellow onion, chopped
1 tbsp minced garlic
3 to 4 tbsp canned diced tomatoes, or fresh
2 tbsp canned green chiles
1 tbsp Spanglish Asadero Surf & Turf
1/4 cup fresh cilantro, finely chopped
3 tbsp lime juice
Corn or flour tortillas
1 avocado, sliced
lime wedges for garnishing,if desired

Quick Cod in Tomato Basil Sauce
Oh what a night! This cod recipe takes under 20 minutes to cook from start to finish. I’m pretty fast so I got it done in 15 minutes. This is a must try recipe and super flavorful.

While I cooked, I watched my friends at @upandadamlive in our members only live. The tea was really good tonight!

Ingredients:
2 to 4 cod fillets, dried with paper towels
2 tbsp olive oil
Crushed red pepper flakes to taste
1 tbsp minced garlic
1 cup cherry tomatoes, halved
1/4 cup basil, finely chopped
1/2 of a lemon’s juice
salt to taste
black pepper to taste

Directions:
Heat oil in a sauté pan over medium heat. Add crushed red pepper flakes, garlic and sauté for 1 minute. Add the cherry tomatoes and cook, stirring occasionally, for 2 to 3 minutes until they’re starting to soften. Stir in the basil, lemon juice, salt, pepper and cook for another minute. Create pockets and add the cod fillets. Cook for 3 to 4 minutes. Turn over and cook for another 3 minutes. Depending on the thickness of the cod it could need more or less time. When done, cover with the tomato sauce and enjoy!

This recipe is soooo good! And even though there is no cheese in it, it pulls almost just the same. Oh, and it has prosciutto di Parma!
You can also make them ahead and freeze after forming and before frying. These are a perfect make ahead appetizer.
