Tomato Basil Chicken
All I can say is YUMMY!!!! This Super Easy Tomato Basil Chicken is a home run recipe!I am obsessed with angel hair pasta and it goes perfect with this recipe. Once you have it, you’ll want it again and again!
Ingredients:
1 1/2 lbs skinless, boneless chicken breasts, cut into thin fillets or small chunks
Olive oil to cover bottom of the pan or to taste
1/2 tbsp ground oregano (I use Dominican oregano)
Salt and pepper to taste
2 tbsp. butter
1 lb cherry tomatoes, halved
5 garlic cloves, sliced really, really thin
1/2 cup fresh basil, finely chopped
Garnish with shaved or grated Parmesan cheese
Instructions:
Heat olive oil over medium high heat.
(Start heating the pasta water when you start cooking the chicken. Once you turn the heat down to medium and add in the tomatoes and garlic, you can start cooking the pasta)
Place chicken into pan, season chicken by sprinkling with a little salt, a little pepper and a little oregano. Cook about 3-4 minutes. Flip chicken and sprinkle with a little salt, pepper and oregano again. Cook another 3 minutes.
Turn the heat down a little to medium and add the tomatoes and garlic. Cook for about 4-5 minutes or until the tomatoes begin to soften.
Add in basil and butter, stir until combined. Season with additional salt and pepper if desired.
Turn heat to low and let sit for about 5 more minutes or until your pasta is done cooking. Make sure the base is oily and not watery.
Serve chicken over pasta and add parmesan cheese as desired.
