Whole Roasted Mustard Cauliflower

This Whole Roasted Mustard Cauliflower is insanely easy to make and wonderfully delicious!!!

I was never big on cauliflower until, believe it or not, my 40’s! I know, I am ridiculous! I ordered a dish at a restaurant and there it was, as a side. Nice and roasted with some grated parmesan on top. I decided to try a little piece and the rest is history. Now I love it. In an attempt to do less work when roasting (I usually chop it up), I went with the whole head and I don’t think I am ever going back to chopping it unless I am mixing it with other veggies.

This was my first time making this recipe and I really, really loved it. Please try it!

Mustard Roasted Cauliflower Head

Ingredients:

Large head cauliflower, cut leaves off bottom
Olive oil to taste to cover cauliflower head
Sea salt to taste
1/4 butter
3 tbs Dijon mustard
Fresh parsley, finely chopped

Instructions:​

Heat oven to 400 degrees.
Place cleaned cauliflower head in a shallow oven-safe, non-stick skillet.

Cover with olive oil and make sure the oil falls on the skillet and that the cauliflower is covered 100% with the oil as well.

Season with salt to taste.

Cover with the pan with aluminum foil, try not to have any open gaps.

Place in oven for about 40 minutes. If it’s a big sized one add another 10 minutes.

During the last 10 minutes melt the butter, add the mustard and whisk. Then add the parsley. Set aside.

When 40 minutes are up, drizzle or brush the mustard butter over the cauliflower heard and place back in the oven, uncovered for another 10 minutes or until desired roast is achieved.

And voila! Enjoy!!!

I think next time I am going to sprinkle some red pepper flakes at the end to give this a kick.

Notes

Would you like to add some heat, sprinkle some red pepper flakes at the end to give it a kick.
