Let’s Party! Beef (Dominican style) and Fish Tostadas, Tacos and Lettuce Cups
I was originally making my Dominican Beef Tostadas for this post but then decided to also make the filling for my Fish Tacos to put on the tostadas. Then I decided to place them on not just tostadas but also tortillas and lettuce cups.
The medley turned out great and dinner was a true adventure. This is also a great way to entertain next time you have a gathering. I am definitely doing it. 😉
For the Beef:
Ingredients
2 lbs 85% ground beef
3 tbs lime juice
2 tbs soy sauce
1 tablespoon Goya Adobo
1/2 ground Dominican oregano
1/2 teaspoon dried cilantro
2 tablespoons Goya Salad Olives and a bit of the juice
4oz canned Goya Tomato Sauce
Directions
In a heavy bottom pan, brown beef.
When it’s browned about half way, add lime juice, soy sauce, adobo, oregano, cilantro, salad olives and tomato sauce.
Continue to cook stirring frequently until totally cooked. You’ll know because the liquid will become a bit greasy.
For the Fish:
Ingredients
1 lb tilapia fillets, rinsed and pat dried
1 tsp olive oil
1 small onion, chopped
4 garlic cloves, finely minced
2 jalapeño peppers, chopped (seeds removed for less heat) (OPTIONAL)
2 cups diced tomatoes (I prefer fresh tomatoes)
1/4 cup fresh cilantro, chopped
3 tbsp lime juice
salt and pepper to taste
Directions
Heat olive oil in a skillet.
Sauté onion until translucent, then add garlic. Mix well.
Place tilapia on the skillet and cook until the flesh starts to flake.
Add jalapeño peppers, tomatoes, cilantro and lime juice. Sauté over medium-high heat for about 5 minutes, breaking up the fish with the spoon to get everything mixed well; season to taste with salt and pepper.
Additional Ingredients:
Tostadas, tortillas and Boston lettuce
Shredded taco cheese for topping
Fresh Salsa for topping
Avocado or Guacamole for topping
Lime wedges for topping
Fresh Cilantro for topping
And whatever your heart desires!
