Harlequin Tilapia
I called this fish recipe “Harlequin Tilapia” because of how colorful it is. 20 plus years ago my husband and I had fish in the refrigerator and were trying to figure out how to cook it with the ingredients we had on hand and this was what we came up with. It was insanely delicious! Of course, now it’s a staple in our home.
You can replace the tilapia with another white fish of your choosing but I prefer tilapia because I like how it doesn’t smell up my house! LOL I know, I’m funny but it sucks having your house smelling like fish for hours after dinner.
You can prepare this the night before or the morning of, it is a great recipe to make ahead. Just bake it when you are ready for dinner. Serve with a beautiful green salad, rice, beans. You can’t go wrong with any side.

Ingredients:
4 tilapia fillets (or other white fish)
2 eggs
1 cup Lemon Pepper marinade
1 cup seasoned bread crumbs
2 cups chopped onion and peppers
1 cup olive oil, divided
Directions
Preheat oven to 375º degrees.
In a deep plate whisk the eggs to create an egg wash.
Add lemon pepper marinade to the egg wash.
Dip the fish in the egg wash marinade, then lightly dredge in seasoned breadcrumbs.
Pour 1/2 the olive oil into a baking dish.
Add half the onions and peppers into the baking dish and spread as evenly as possible.
Add the rest of the olive oil into the remaining chopped onions and peppers.
Place the breaded fish in a single layer in the baking dish.
Sprinkle the rest of the oiled onions and peppers over the fish.
Bake for 25 minutes or until fish is cooked through.
Serve with salad, rice, potatoes. The options are endless!
