10 Minute Garlic Texas Toast Sandwich with Burrata, Pesto & Tomato

When lunch is whatever I can find in the refrigerator
This is probably one of the most accurate examples of how I eat lunch during the week. I am usually not making some elaborate lunch for myself. I am either reheating leftovers or opening the refrigerator and figuring out what I can make with what I already have. And that is exactly how this Garlic Texas Toast Sandwich with Burrata, Pesto and Tomato happened.
I had frozen garlic Texas toast, prepared pesto, tomatoes and burrata cheese. That was enough for me! From the time I started putting everything together, this took me about 10 minutes. I am not counting the time it takes the oven to preheat because every oven is different. Once it was hot, though, everything moved very quickly.
And this sandwich was SO good! I cannot recommend it more!
The buttery garlic Texas toast gets crispy on the outside while still staying soft enough inside. Then you have creamy burrata, fresh tomato and pesto all together. Add salt and pepper if you’d like. I also recommend you have room temperature tomatoes and the burrata waiting for you to cut open while you cook the Texas Toast.
One thing I can tell you for sure is that sometimes the easiest meals really are the best ones.
Use what you have
This is less of a strict recipe and more of an idea I hope inspires you the next time you are standing in front of the refrigerator wondering what to eat.
No burrata? Fresh mozzarella would be great.
No pesto? Try a little basil spread, garlic aioli or even just good olive oil.
Have leftover grilled chicken? Add it.
Have prosciutto? That would be delicious too.
This is exactly the kind of lunch I make all the time. Quick, easy and based completely on what I already have available. And when the combination turns out this good, it deserves to become a recipe.

10 Minute Garlic Texas Toast Sandwich with Burrata, Pesto & Tomato
Ingredients
- 2 slices frozen garlic Texas toast bake as instructed for crispy crust
- 1 to 2 tbsp 1 to 2 tablespoons prepared pesto definitely to taste
- 1 1 small tomato sliced
- 4 oz Burrata cheese as close to that amount
- Freshly ground black pepper optional
- Salt optional
Instructions
- Preheat the oven to 450°F.
- Place the frozen garlic Texas toast in a baking dish or on a baking sheet.
- Bake for 4 minutes.
- While Texas toast cooks, slice tomatoes and get cheese ready.
- Flip the Texas toast and bake for another 4 minutes, until golden and crispy.
- Spread the prepared pesto over one slice of toast.
- Add the burrata cheese next, you can spread or add big chunks like I prefer it.
- Layer the sliced tomatoes over the burrata.
- Season with a little black pepper or salt if desired.
- Top with the second piece of garlic Texas toast.
- Cut in half and serve immediately.
