Pork and Chive Dumplings w/ Sesame Soy Dipping Sauce

Boy was I impressed with this Sur La Table’s cooking class! My husband gifted me a “Chinese Cooking 101” class for Christmas which I attended this past January and I was floored by how simple making these delicious dumplings was. Also, the fact that I could make a large amount and freeze for later was even more exciting. I just needed to share this recipe with you!

And of course, I highly recommend you take their cooking classes! I am sure going to sign up for more!

Pork and Chive Dumplings

Ingredients:

Dumplings
1/2 lb ground pork
2 tsp peeled and minced fresh ginger
1/2 cup minced green cabbage
1 garlic clove, minced
1/2 cup thinly sliced fresh chives
2 tbs soy sauce
1 large egg white
1 tsp sea salt
1 package 3″ round “Shanghai or Hong King Style” dumpling wrappers

Sesame-Soy dipping sauce
2 tbs soy sauce
1 tbs rice vinegar
1 tsp peeled and minced fresh ginger
1 tsp sugar
1/2 tsp toasted sesame oil
1 tbs thinly sliced fresh chives
Cabbage leaves for lining, or oiled sheets of parchment paper

How to make the dumpling filling
In a mixing bowl, add pork, ginger, cabbage, garlic, chives, soy sauce, egg white, and salt. Combine well.

How to make the dumplings
Lay 1 wrapper at a time until you feel comfortable doing more at a time.

Place a teaspoon full of the pork mixture at the center of the dumpling wrapper. Using a pastry brush or a fingertip, brush cold water around the edge of the dumpling.

Fold wrapper in half and then pinch the edges as shown in the Youtube video

Place assembled dumplings with pleated side up, on a rimmed baking sheet lined with parchment paper or non-stick Reynolds wrap. Cover with clean, damp paper towel to prevent drying. repeat until done. 

Heat water in a skillet or steam pot. 

Arrange dumplings in steamer at least 1/2 inch apart, cover and steam for about 6 to 8 minutes. 

While steaming, combine all dipping sauce ingredients in a small bowl and set aside.

When dumplings are done, serve onto a large warmed platter and serve immediately with the dipping sauce on the side.

Notes

This is the best layout to first freeze the dumplings for later. Once frozen, place them in a freezer bag. They will stay fresh for approximately 1 month.
