Chorizo Baked Potato Slices
I am in love with potatoes, cooked in any way. So this Chorizo Baked Potato Slices recipe is absolutely perfect to satiate my potato cravings. Tender potato base, dusted with Spanglish Asadero’s Mexican Ancho Chile seasoning, topped with ground chorizo, sprinkled with a delicious Mexican cheese blend and finished off with sliced green onions. This is a perfect appetizer you can prepare ahead and finish right as your guests are arriving or when your game starts.
But what truly sets this dish apart is that crowning touch of Spanglish Asadero’s Mexican Ancho Chile seasoning. This blend pays homage to traditional Mexican flavors, introducing a smokey depth and subtle heat that tantalizes the taste buds. Combine that with the chorizo and you’ve got a hit!

Chorizo Baked Potato Slices
Ingredients
- 2 large russet potatoes
- 5 tbs olive oil more if needed
- Spanglish Asadero Mexican Ancho Chile sprinkled to taste
- 1 lb Chorizo ground
- Mexican salsa medium heat, to taste
- 8 oz Mexican Cheese Blend
- green onions chopped
Instructions
- Set oven at 400° degrees.
- Start by washing your potatoes and then slicing into 1/2 inch circles.
- Lay the slices over a parchment covered baking pan.
- Brush the slices with olive oil.
- Sprinkle with desired amount of seasoning. Spanglish Asadero's Mexican Ancho Chile is what I used here. It's nice and spicy. But you can use any other Mexican seasoning you like.
- Bake for 40 minutes or until the potatoes are tender.
- While the potatoes bake, cook the ground chorizo.
- When the potatoes are done, remove them from the oven.
- Top the slices with desired amount of the cooked chorizo.
- Next add a bit of salsa over the chorizo. I did this to add even more heat. If you are not into very hot, add a mild salsa instead.
- Top with the Mexican cheese blend.
- Place back in the oven until the cheese melts.
- Immediately top with the green onions and enjoy!
